                      Method
 Rub the margarine into the flour to a breadcrumb stage. Mix in the sugar and work the mix to form a dough.
 Press a thin layer of dough into a shallow flan tin and chill for 15 minutes.
 Spread jam or lemon curd over the first layer of dough and top with a second layer, sandwiching the jam in between.
 Bake Gas 4/180°C for 30-40 minutes until cooked through and lightly golden on the top.
 Sprinkle the top with icing sugar, cut into portions & serve.
