                      Method
 Place gammon joint in a tin and cook for approximately 11⁄2 - 2 hours at Gas 5/190°C.
 Remove from the oven and brush with honey. Put back in the oven fo 10 mins to glaze.
 Probe the meat to ensure it has reaches a core temperature 75oC for 30 seconds, and the juices run clear.
 Allow meat to rest, covered, for 10 minutes before carving.
