New York’s Israeli Chef
At the heart of the East Village in New York, between a Mexican and an
Indian restaurant, is Timna, the best new restaurant in the United States for
two thousand fifteen, according to the choice of the USA Today readers.
The prestigious choice surprised the chef, Nir Messika, himself, who
opened the restaurant with two Israeli partners just eight months ago atop
the ruins of the first hummus place in the big city. The “Cinderella” of the
Israeli culinary world started (his) cooking career as a dish washer at a
café in the Krayot. He was later a sous-chef side-by-side with the master,
Meir Adoni, where he learned the art of the Israeli bite. Messika came to
New York four years ago with his wife, who he met when she was
waitressing at the restaurant where he worked. Even though
“Mediterranean food” [English] may sound more exotic and inviting,
Messika insists on putting the authentic “Israeli food” [English] on the
map. From afar he also encourages (his) colleagues in Israel who are
having a hard time surviving financially, and suggests turning Israel from a
startup nation to the chef nation as well.
