Food Truck
This week the Food Truck festival will be opened at the Port parking lot,
the first one in Israel. Twelve trucks will double park and offer a variety of
dishes. Besides the romance, the decision to leave the restaurant and move
to a truck is obviously financial as well. In recent times, Israel’s best chefs
are coming out of the sizzling restaurant kitchen and moving to food
stands, cheaper and accessible. “A restaurant has big crews, waiters and
dishwashers, (it’s) a big operation. When you step inside a food truck
everything is cut down.” In the world, food trucks have already become an
inseparable part of food culture. But in Israel like in Israel, the bureaucracy
hits [lit. pushes] the breaks. The municipalities aren’t willing to forgo the
municipal taxes so quickly, and obviously restaurant owners won’t give
their blessing for the road. But like every trend that begins in the United
States, it will eventually get here too.
