→Such esters are easily hydrolyzed by alkali glycerol + alkali salts of the fatty acids

A- according to the number of esterified hydroxyl group:
Monoglyceride: One hydroxyl gp of glycerol is esterified
Diglyceride: Two hydroxyl gps of glycerol are esterified
Triglyceride: Three hydroxyl gps of glycerol are esterified
B- according to the nature of fatty acids:
Simple glycerides: the same fatty acid radicals
Mixed glycerides: different fatty acid radicals
