It is a measure of FA chain length/ Mw
SPV is inversely proportional to mean Mw of FA, i.e. low Mw FAs require

  high amount of KOH for their saponification

To detect presence of glycerides of low Mw FAs, e.g. butter fat, SPV ~ 250

To detect adulteration with paraffin oil "Unsaponifiable oil"→ very low SPV
