          Twelve years ago, the
         conversation around water in the
         coffee industry was only just
         beginning to evolve. At the time,
         discussions were still largely
         focused on scale prevention
         rather than water quality
         optimisation, and the tools
         available reflected that.
          Calcium Treatment Units (CTUs) were the
         market standard but were far from
         perfect. CTUs presented two main
         challenges. Firstly, their design led to an
         issue known as channelling, where water
         travelling through the resin would find the
         path of least resistance and continue to
         follow it. This meant that much of the resin
         remained unused, significantly reducing
         the life and efficiency of the unit.
          Secondly, older CTUs had fixed bypass
         settings – the mechanism that allows a
         small amount of unfiltered water to pass
         through to maintain essential mineral
         content. In areas with high water
         hardness, fixed settings could lead to
         limescale issues, while in softer water
         areas, they could unnecessarily reduce the
         filter's lifespan.
