Cooking for Healing






















        Egg Drop Soup

         This light soup is perfect for chilly winter nights, but is also a perfect light

                                    meal to replace heavy holiday foods!




        Ingredients                                            medium heat. Bring to a simmer.

        4 cups chicken broth
        1.5 tablespoons cornstarch                             Whisk in the cornstarch and broth
        1/2 teaspoon fresh ginger finely grated                mixture. Turn the heat to high and bring to

        2 teaspoons soy sauce                                  a boil. Cook for 1 minute, before turning
        1 teaspoon toasted sesame oil                          the heat back down to medium.

        Salt and pepper to taste
        3  beaten eggs                                         Using a wooden spoon, slowly stir the soup
        1/3 cup corn kernels                                   in a circular motion as you slowly pour in

        1/4 cup green onions sliced, plus more                 the beaten eggs.
        for garnish

                                                               Stir in the corn and green onions and cook
        Instructions                                           for 1 minute.
        Whisk together 1/4 cup of chicken broth

        with the cornstarch and set aside.                     Serve, garnished with additional green
                                                               onions.

        Put the rest of the broth, ginger, soy sauce,
        sesame oil, salt and pepper in a pot over              Enjoy!
