Green Detox Soup
Green detox soup is a nutrient-packed, cleansing dish made from a variety of fresh
green vegetables like spinach, kale, broccoli, and zucchini. Often combined with herbs,
garlic, and lemon, it’s designed to promote digestion, boost energy, and support the
body's natural detoxification process. This light yet satisfying soup is rich in vitamins,
antioxidants, and fiber, making it a perfect choice for a healthy, revitalizing meal.
2 tablespoons olive oil 1 thumb-sized piece of ginger, grated
1 large onion, diced 1 teaspoon turmeric
4 garlic cloves, minced 4 cups vegetable broth or bone broth
2 celery stalks, chopped 1 cup fresh cilantro, chopped
2 cups broccoli florets 1 lemon, juiced
2 cups fresh spinach Sea salt and black pepper to taste
1 medium zucchini, chopped Optional: 1/4 teaspoon red pepper flakes
1. Heat olive oil in a large pot over medium heat. Add onions and cook
until translucent (about 5 minutes).
2. Add garlic, ginger, and turmeric. Cook for 1 minute until fragrant.
3. Add celery, broccoli, and zucchini. Cook for 3-4 minutes, stirring
occasionally.
4. Pour in vegetable broth and bring to a simmer. Cook for 10-12
minutes until vegetables are tender but still bright green.
5. Add spinach and cilantro, cook for another 2-3 minutes until spinach
is wilted.
6. Turn off heat and stir in lemon juice. Season with salt, pepper, and
optional red pepper flakes.
7. Using an immersion blender (or transfer to a regular blender), blend
until smooth while leaving some texture.
