Date Nut Cake
(Charlene’s mother’s recipe)
1/2 pound English walnuts, diced
1 pound pitted dates, diced
1 cup boiling water with 1 teaspoon baking soda
1 cup sugar
Melted butter the size of an egg
2 beaten eggs
1‐1 /2 cups all purpose flour
1/4 teaspoon salt
1 teaspoon vanilla
1. Put dates and nuts in water and soak.
2. Cream together sugar and melted butter.
3. Add eggs flour, salt and vanilla.
4. Fold in dates and nuts, along with remaining soaking liquid.
5. Grease and flour or grease and line loaf pans with wax paper.
This will make 1‐2 regular size or 3‐5 smaller loaves.
6. Pour batter into pans.
7. Bake for 1 hour in slow oven at 300 degrees.
8. Freezes well.
