Survival Casserole
4 half cup servings of minute rice
1 medium green pepper
1 pound ground beef
1 tablespoon butter
2 (8oz.) cans of tomato sauce
1 tablespoon oregano
1/2 teaspoon garlic powder
1 tablespoon instant minced onion
1 teaspoon salt
1/2 teaspoon pepper
3 oz. mozzarella cheese, sliced thin
4 slices American cheese
1. Prepare rice according to package directions.
2. Cut green pepper in half, remove seeds, slice and chop.
3. In 12 inch iron skillet, melt butter over medium heat.
4. Add green pepper and ground beef.
5. Cook for 4‐5 minutes, stirring often, until meat is no longer pink.
6. Pour in tomato sauce. Add oregano, garlic powder, minced onion,
salt and pepper. Stir 1 minute.
7. When rice is ready, add to skillet and stir, cooking 4 minutes more.
8. Top meat mixture with cheeses. Cover skillet with lid. Cook 3
minutes or until gooey.
