                                            Mashed Sweet Potatoes


                                               1 can sweet potatoes (40 oz.)

                                                   1/2 cup brown sugar


                                                     1 teaspoon vanilla

                                                       A pinch of salt

                                                      1/2 stick butter



                     1.  Heat sweet potatoes in a pan.

                     2.  Bring to boil and boil 5 minutes. Be careful not to let the potatoes scorch.

                     3.  Drain off liquid and put in a 1 quart oven‐proof casserole dish.

                     4.  Add brown sugar, vanilla, butter and salt.

                     5.  Smash with a potato smasher.

                     6.  Taste to adjust seasonings.


                     7.  Heat in oven or microwave until hot.

                     8.  This can be made ahead of time and heated up when ready to serve.
