                                               Chocolate Chess Pie

                                                          Serves 6‐8


                                               1 pie shell, unbaked (9 inch)


                                                     1‐1/2 cups sugar

                                                   3 tablespoons cocoa

                                                  1/4 cup butter, melted

                                                  2 eggs, slightly beaten

                                                     1/8 teaspoon salt

                                             1 can evaporated milk (5.33 oz.)

                                                     1 teaspoon vanilla

                                        1/2 to 3/4 cup chopped pecans (optional)

                                                 "I don't use the pecans for mine"

                              1. Prepare unbaked pie shell.

                              2. Mix sugar, cocoa, and butter. Stir well.


                              3. Add eggs and beat with electric mixer for 2‐1/2 minutes.

                              4. Add salt, milk, and vanilla.

                              5. Stir in pecans, if desired.

                              6. Pour filling into pie shell.

                              7. Bake at 400 degrees for 15 minutes.

                              8. Reduce heat to 350 degrees and bake at 350 degrees for

                                  20‐30 minutes.
                              9. Pie is done when center quivers slightly.
