Jim’s Chile
4 pounds Ground Beef (80 to 85% lean recommended)
4 cans (15 oz.) of tomato sauce (Hunts or Del Monte recommended)
4 cans (15 oz.) of Kidney or Chile beans
1 raw yellow onion, whole, peeled
Chile spice
Salt/pepper
8 cans of water (rinse out sauce and bean cans)
Sugar
1. Add tomato sauce, kidney beans, and water into pot and bring to boil.
2. Brown beef in frying pan breaking into as small of chunks as possible.
3. When beef is done, add the whole pan to the sauce mix. (Do not worry about the
grease now, you can skim off later).
4. Add the whole onion to the sauce mix.
5. Add Chile powder to the sauce mix. If using packets start with two packets and add
more as needed to suit your taste.
6. Add salt and pepper as needed to suit your taste.
7. Add sugar as needed to cut the acidity of the tomato sauce.
8. Bring sauce mix to low temp and allow to cook for at least four hours.
9. Stir sauce mix several times to make sure nothing sticks to the bottom of the pot.
(Recommend about once every half hour or so). Remove onion before serving.
Note
Other things you can add as desired: Garlic Powder, Onion Powder,
Dried Minced Onions – if you use these, I recommend you cook them with ground beef
