                                                 Roast Loin of Pork




                                         Boneless loin of pork (3 to 3‐1/2 pounds)


                                                 3‐4 cloves of garlic, diced


                                                  3 tablespoons olive oil

                                                 3 tablespoons kosher salt


                                                    1/2 teaspoon pepper

                  1‐1/2 teaspoon each parsley, oregano, thyme and rosemary (either ground or diced)



                  1.  Preheat oven to 450 degrees. Bring roast to room temperature.

                  2.  In a small bowl, combine olive oil, garlic and spices, mixing thoroughly. Rub on‐
                     to the roast all over, including ends and bottom. Place into a roasting pan up‐
                     side down.

                  3.  Roast  for  15  minutes  at  450  degrees  and  then  lower  oven  to  325  degrees.
                     Continue to roast for another 15 minutes and then test for temperature. The
                     roast cooks very quickly and is done when it reaches 150 degrees.

                  4.  Let sit for 15 minutes before slicing.
