Going Bananas?


        Thank you to everyone who helped save a case of bananas from
         going to waste in landfill at the Harvest Service. We also more
             than doubled the money for Water Aid, which was great.

        Several people asked me how to freeze bananas. You do need to
       peel them but then you can freeze them whole, slice them or mash
        them if they are very ripe. It’s a good idea to freeze in small bags
                 with the amount you might use at any one time.

        Frozen bananas can be used to make smoothies mixed with other
       fruit and whizzed in a food processor  or blender, or you can make
                       banana bread or banana ice cream.

                                  Banana Bread

                         8 oz  Self raising flour 4oz butter
                            5 oz Fairtrade caster sugar
                     1 lb gooey bananas (Fairtrade of course)
                                 ½ tsp salt 2 eggs
                                  6 oz mixed fruit

        Heat the oven to 180. Peel and mash bananas or defrost mashed
            bananas. Mix all but dried fruit together. Stir in dried fruit.
         Spoon into greased or non stick 2 lb loaf tin. Spread evenly and
         bake for 1½ hrs. Leave to cool for 15 minutes then turn out onto
                                    cooling rack.

                                Banana Ice Cream
                1 frozen banana per person. 1 tsp milk per person
           Whizz in blender until it reaches constituency of ice cream.
                  Top with chocolate sauce and chopped nuts if
                                wanted, and serve.
