SWEET POTATO BEER BREAD RECIPE
Ingredients:
500g cooked sweet potato • 2 garlic cloves crushed
( 1 large or 2 medium) • 50g soft butter
• 2 cups (500ml ) lukewarm water • 2 tablespoons (30 ml ) coarsely chopped
• One can (330 ml) room temperature beer fresh sage and Rosemary or Basil leaves
• 10 cups (1,2 kg) white bread flour anything you enjoy. You could also top it up
• one sachet (10g) instant yeast with Biltong or Cheese.
• 4 teaspoons (20 ml) of salt • 1 teaspoon coarse salt
• 2 teaspoons (10 ml) sugar • extra-virgin olive oil to serve
METHOD
1. Remove the skin from the cooked sweet potato, place the flesh in a mixing bowl and mash using a
fork. In a separate mixing bowl combine the water and the beer, and stir 2/3 of the mixture into the
mashed sweet potato until just mixed through . Set the rest of the beer mixture aside.
2. In a large mixing bowl, sift the flour, add and mix the dry ingredients, yeast, salt and sugar and
then mix the sweet potato mixture into the flour mixture to form a dough (if the dough feels too
stiff, add a little more of the beer mixture), kneed the dough by hand (or use a strong mixer with the dough
hook) for about 10 minutes or until it becomes soft and elastic. Set it aside to rise for about one hour.
3. In the meantime, grease one large or two smaller baking trays with sunflower oil. Grease your
hands with a little sunflower oil and divide the dough into two. Lightly shape two loaves and make
shallow cuts on top. mix the garlic in butter and lightly spread it over the raw loaves . Combine
coarsely chopped fresh Herbs in a bowl then evenly sprinkle on top of your raw loaf .
Preheat oven to 200°C let the dough rise again for about 30 minutes. Bake for 20 minutes at 200°C,
reduce the oven temperature to 180°C and bake for another 40 minutes or until done. Then slice
open your freshly made sweet potato beer bread and enjoy with Olive Oil, Butter or a slice of Ham.
