                                Basic Pickle Recipe














                                                    Combine all ingredients in a pot and bring to a vigorous

                                                    boil. lower the heat and simmer for 5 minutes. Strain the
          1 cup water
                                                    brine and pour directly over your desired items that you
          1 cup Rice Wine Vinegar
                                                      are pickling. Cover and make sure that the items are
          9 Tablespoons sugar
                                                       submerged. Refrigerate and keep for up to 30 days.
          3 teaspoons kosher salt
                                                     Pickles will be ready in one day but will be better after

          1 teaspoon coriander seed
                                                                                four.
          1 Teaspoon mustard seed
                                                     Pickles are a great way to add zing and contrast to a
          1/2 teaspoon whole peppercorn
                                                      variety of applications and dishes. Items that I like to
          2 cloves garlic
                                                    pickle are red onions, shallots, peaches, varies chilies,

                                                       cucumbers, fennel, carrots, cauliflower and even

                                                    proteins like shrimp and eggs. It's a versatile technique

                                                              that can help elevate ordinary dishes.
