CHEF'S CORNER






                                   B A C O N   J A M





       Ingredients




         Makes 2 Cups


           1 pound, thick cut bacon, diced
           1 large red onion, diced

           ½ cup brown sugar
           ¾ cup water
           1 tablespoon balsamic vinegar










       Directions




         1. In a soup pot, render the bacon until almost crispy,

           drain the fat and bacon.
         2. Leave 1 tablespoon of bacon fat in the pan and cook
           the onions for 8-10 minutes over low heat. You want to
           sweat the onions, not caramelize them.
        3. Add the brown sugar and cook for an additional 10-15
           minutes over low heat until caramelized.
        4. Add in the bacon, water and balsamic.
        5. Continue cooking over low heat for 20-30 minutes
           until you reach a syrup like consistency.
        6. Cool and reserve.
