strict  temperature  control  and  oxygen  supply  (continuous


               mixing  with  optimal  speed),  which  allows  to  obtain  highly


               standardised final product with desired/designed properties.



               The temperature is maintained at 25±0.2°C during all duration


               of the fermentation process, the stirring is carried out at 15


               cycles/min, and the air circulation takes place through close


               cycle tubes of the bioreactor.  The entire  process  takes 180


               days.



               The  process  of  fermentation  is  frequently  in-process


               controlled  for  microbial  contamination  to  carry  out  strict


               quality control. The final product is pressed, liquid supernatant


               is collected, sterilized, and filtered through microbial filters.


               The  essential  step  of  sterilization  is  performed  under  low


               temperature  (55°C)  that  allows  the  product  to  be  free  of



               contaminants, and at the same time preserves temperature


               unstable substances, such as plant polyphenols.



               The qualitative/semi-quantitative analyses of the final product


               consisting of a mixture of bio-active substances are carried out


               using  HPLC,  MS-GC,  spectrophotometry,  and  fluorescent


               methods.  Also,  the  antioxidant  and  free  radical  scavenging
