Bioactive Compounds
Among bioactive molecules, there are proteins and protein
decomposition products (peptides and amino acids); lipids,
phospholipids, phytosterols and lipid derivatives, for example,
fatty acids and lysophospholipids; DNA, nucleotides and their
bases; carbohydrates, mainly, oligosaccharides and fruit acids;
polyphenols (anthocyanins, bioflavonoids, phenylpropanoids,
and iridoids), terpenoids, and anthraquinones; some minerals
(sodium, potassium, calcium, magnesium, manganese, and
zinc).
All these numerous bioactive compounds can be divided into
four main groups in accord with four major mechanisms of
biological effects observed:
1. Enzymes of vegetative yeast and Lactobaccilus origin:
proteases and caspases of papaya; lipase and phospholipase
of papaya and Lactobaccilus; amilase from Lactobaccilus;
nucleotidases of papaya; antioxidant enzymes of plant, yeasts,
and Lactobaccilus origin (catalase, superoxide dismutase,
glutathione peroxidase).
