Curried Chicken Kare Ayam
Curried Chicken is one of Indonesia’s most famous dishes, blending a variety of herbs
and spices to create a savory and heartwarming dish. To extract the most intense
flavors, it’s imperative to use chicken with the bones in. The key to fantastic Curried
Chicken is to be indulgent with the seasonings. After all, chicken, potatoes, and
coconut milk are all mildly flavored to begin with, so they make a great canvas for a
beautiful meal when all the right ingredients are simmered together. As a garlic lover,
I use a lot of it in this dish without making it the focal point. This is an easy dish to
prepare and will keep well in the refrigerator for several days.

1 tablespoon dried shrimp paste (Indonesian terasi or Thai shrimp paste)
