¼ large red onion, finely diced

           2-4 bird’s-eye chili peppers, sliced diagonally

           1 tablespoon dried shrimp paste (Indonesian terasi or Thai shrimp paste

           2 fresh, boneless, and skinless chicken breasts, sliced into thin strips


           ¼ cup (65 ml) water

           2 tablespoons sweet soy sauce

           1 tablespoon sambal oelek

           ¾ teaspoon salt

           1 Heat the oil in a wok on high heat. Sauté the garlic, onion, chili peppers, and shrimp
           paste until fragrant and lightly browned.


           2 Add the chicken and sauté for about 2 minutes until browned. Add the water and
           lower heat to medium high.

           3  Add the sweet soy sauce, sambal oelek, and salt. Stir until thoroughly mixed for
           another 2 to 3 minutes. Serve with warm rice.
