Spicy Lemongrass Beef Daging Asam Pedas
Whenever I’m going to prepare a meal for my maternal uncle I rifle through my
collection of Indonesian beef recipes. As a traditional Asian man, he feels that he
hasn’t really eaten unless he’s had a meal with beef and rice. Spicy Lemongrass Beef
has everything my uncle loves: tender chunks of meat bathed in cooked tomatoes,
citrusy lemongrass, and piquant tamarind. Adding little red chili peppers provides a
spiciness that makes the white rice accompaniment to this dish a very welcome
addition. Despite the complex layers and full-bodied flavors in this Spicy Lemongrass
Beef, preparation and cooking time are minimal for a dish that can easily dazzle meat
loving family and friends.

6 cups (1.5 liters) water
2 lb (1 kg) beef chuck or stewing beef, cut into bite-size chunks
12-16 cloves garlic
4 stalks lemongrass, tender inner part of bottom third only, finely minced
