           1 Scale, clean, and ri nse the fish. Score the fish using a sharp knife three to four times
           on each side, making approximately two-inch slanted slices into the flesh.

           2 In a large baking dish, pour the sweet soy sauce and lime juice over the fish and rub
           evenly all over both sides. Allow to sit and marinate for about ten minutes.

           3 Preheat oven to 375°F (190°C). Sprinkle the salt evenly on both sides of the fish.

           Bake the fish for approximately 20 minutes.

           4 Then turn the oven to high and broil fish for about 5 to 10 minutes depending on the
           strength of the oven. The top of the fish should be just beginning to caramelize and
           brown. Serve the fish immediately with lime wedges and cucumber slices on the side.
