1 cup (200 g) sugar
4 cups crushed ice
1 Soak the green mung beans in a bowl of cold water for at least 2 hours, up to
overnight.
2 Drain the beans once they have soaked long enough. Bring 3 quarts (3 liters) of
water to a vigorous boil in a pot. Stir in the drained green beans and lower the heat to
medium high. Simmer for approximately 30 minutes, stirring occasionally.
3 Add the sugar, lowering the heat to medium and simmer for another 20 minutes until
the beans begin to pop open. While simmering, continue to stir occasionally, making
sure nothing sticks to the bottom of the pot.
4 Remove the pot from the heat and allow the beans to cool down for at least an hour
in the sweetened water. When ready to serve, fill half of each serving glass with
crushed ice. Then ladle the beans and sweetened water over the crushed ice and serve
immediately. The beans can be kept in the refrigerator for up to 1 week.
