Dennoch bedauert er, dass es aufgrund der langen Reifeperioden immer schwieriger wird, Rieslinge mit niedrigeren Alkoholwerten auszubauen, denn die Kunden wünschen sich einen leichten Terrassenwein mit feiner Frucht und reifer Säure. „Im Bereich von zehn Prozent Alkohol zu bleiben, ist durch die lange Reifeperiode deutlich schwieriger geworden,“ bedauert er.
Zweigeteilte Weinleidenschaft
Die Weinleidenschaft von Hanno Rothweiler ist zweigeteilt. Da ist der Riesling, der ihm sehr am Herzen liegt, gleichwohl betont er: „Persönlich bin ich rotweinaf n.“ Und auch da hat seine Weinkarte viel zu bieten: Cabernet Sauvignion, Dornfelder, Merlot, Regent, Syrah, Dakapo, Zinfandel, Sankt Laurent. Insbesondere hat es ihm der Syrah angetan, für den er in enger Zusammenarbeit mit dem Weinbauamt aus dem Versuchsanbau heraus die reguläre Anbaugenehmigung für die Hessische Bergstraße erreichte.
A divided passion
Hanno Rothweiler‘s passion for wine has two personalities. There is the Riesling, which is very close to his heart, nevertheless he emphasizes: „Personally, I love reds.“ And, here too, his wine list has a lot to offer: Cabernet Sauvignon, Dornfelder, Merlot, Regent, Syrah, Dakapo, Zinfandel, Saint Laurent. He has particularly fallen for Syrah. He worked closely with the Viticulture Of ce to gain permission from Hessische Bergstraße to turn what had been an experiment into a regular offering.
„Offering such a broad range of varieties requires a lot of work and time managing the cellar!“ He did not really have to point this out to us, as we were amazed at the countless large and small stainless steel and oak barrels in the cellar, where each wine batch is strictly separated from the others. Rothweiler also insists on doing a lot of things manually. In the fermentation room, the recently harvested 2017 Pinot Noir is on the mash and is crushed three times a day by hand, in order to get as much colour as possible from the grape skins.
