       CAROLINA BBQ RIBS



       2 racks of ribs(12 bone) cut in half.
                                                                             Serves 4
       For BBQ Sauce
       Ingredients:
       1 cup prepared yellow mustard

       1⁄2 cup sugar
       1⁄4 cup light brown sugar

       3⁄4 cup cider vinegar
       1⁄4 cup water

       1 tablespoons chili powder
       ½ teaspoon black pepper

       ¼ teaspoon cayenne
       ½ teaspoon soy sauce

       2 tablespoons butter
       1 tablespoon liquid smoke

       Directions:
       Mix all except soy, butter and liquid smoke.
       Simmer 30 minutes. Stir in remaining ingredients
       and simmer for 10 more minutes.
       Refrigerating overnight is best and allows flavors to blend.


       Spice rub:
       1 tablespoon granulated garlic

       1 tablespoon granulated onion
       1 tablespoon salt

       ½ tablespoon black pepper
       ¼ tablespoon chili powder
       2 tablespoon paprika

       1 tablespoon sugar
       1 tablespoon brown sugar

       Preaheat oven to 275 degrees.
       For Ribs: Here at the club we use a lang smoker with oak and cherry wood to cook. For home: clean ribs
       and season with spice rub. Place in baking pan with and slow roast for approximately 2-2 ½ hours or until
       tender. Remove foil after 1 ½ hour to allow ribs to color. Baste with BBQ sauce and serve.
