    Tuna Tartare                                                                                        Serves 1
    1 pound sushi grade tuna diced small
    ¼ cup tuna marinade
    Marinated Cucumber

    Wonton chips
    Micro greens
    1 teaspoon mixed sesame seeds


    Tuna Marinade
    ½ teaspoon chopped mint

    ½ teaspoon chopped chive
    ¼ cup soy sauce
    ¼ cup sweet soy sauce
    Dash sambal oelek (chili paste)
    Combine all ingredients and reserve in
    refrigerator till ready to plate


    Wasabi Aioli

    •  1/3 cup wasabi powder
    •  1/4 cup water

    •  1 teaspoon salt
    •  1 teaspoon sesame oil
    •  1/2 cup mayonnaise
    •  Mix wasabi powder and water to form paste. Combine
        remaining ingredients and reserve in refrigerator till ready to plate.



    Marinated Cucumbers
    1 European cucumber sliced thin
    3 tablespoons rice wine vinegar
    1 teaspoon sesame oil
    1/2 teaspoon sugar

    Salt and pepper to taste
    Arrange cucumbers on the bottom of plate. Combine Tuna with marinade and mold on top of
    cucumbers. Top with wonton chips and micro greens.  Spread wasabi aioli with spoon
    onto plate and sprinkle with sesame seeds.
