             Uses: Coniferin and coniferyl alcohol are considered among the commercial sources of
               vanillin.



                                                   Aldehyde Glycosides


                                                 Vanillin (Glucovanillin)

            Source: Green vanilla pods, collected and carefully cured, so as to permit enzymatic action on
             the glycoside with the liberation of vanillin (the aglycone).

             Uses: Vanillin is widely used as a flavoring agent in perfume and confectionary.

             Vanillin: obtained naturally from vanilla pod or by synthesis from:


                 A. Coniferin, a glycoside present in pine trees.

                 B. From lignin

                 C. Eugenol, a phenol present in clove oil
