Horseradish-Spiced



                 WINTER SQUASH                                                          |  SERVES 4






             Ingredients:                            Instructions:

             Horseradish mixture:                     1.  Preheat oven to 400°F.
             ½ cup prepared horseradish
                                                      2.  In a food processor, combine horseradish mixture
             2 garlic cloves, peeled and minced          ingredients. Blend until smooth, and set aside until
             ¼ cup yellow onion, peeled and chopped      vegetables are ready to roast.

             1 tablespoon fresh rosemary
                                                      3.  Toss cut vegetables with the horseradish mixture, and
             1 teaspoon fresh thyme                      arrange on parchment-lined baking sheets. Roast for

             1 teaspoon fresh sage                       25–30 minutes or until vegetables are tender.
             1 teaspoon salt                          4.  Garnish with thyme and rosemary before serving.


             Vegetables:

             1 acorn squash, seeds removed and cut
             into wedges
             1 butternut squash, seeds removed and
             cut into wedges
             1 small pumpkin, seeds removed and cut
             into wedges


             Garnishes:

             Fresh thyme
             Fresh rosemary
