Jewish people celebrate Pesach to remember how Moses helped the
Israelites escape from Egypt to a new life in the Promised Land.
Recipe for Pesach Apple Cake
At Pesach, Jewish people are not allowed to mix dairy with meat or eggs, so you can’t make a cake with butter and eggs. But this recipe uses other ingredients and the results are just as tasty!
You will need:
23 cm springform cake tin or Bundt cake mould
Food processor Peeler
Grater Kitchen roll Large bowl Spatula Metal skewer Wire rack
Oil for greasing Icing sugar for dusting
6 large eggs
200 g caster sugar 4 green eating apples
300 g almond flour 40 g potato flour
1 Heat the oven to 170°C/ 150°C fan/ Gas Mark 3.
2 Lightly oil the cake tin or mould and dust with icing sugar.
3 Crack the eggs into the food processor and add the caster sugar. Whisk for about 10 minutes until the mixture is light and fluffy.
4 Meanwhile, ask an adult to help you to peel and grate the apples.
5 Tear off 4 sheets of kitchen roll and place the grated apple in the middle. Parcel it up and, over the large bowl, squeeze the grated apple to remove the juice.
6 Set the mixer to a low speed, then add the almond and potato flours and mix well.
7 Use the spatula to gently fold in the grated apple and pour the mixture into the tin or mould.
8 Bake the cake for 60–70 minutes. A metal skewer inserted into the centre of the cake should come out clean.
9 Leave the cake to cool in the tin or mould on a wire rack for 10 minutes. Then flip the cake out on to a serving plate, dust with icing sugar and enjoy!
