COSY Chicken Pie
Pies are a warming dinner treat for cold evenings. This recipe makes one big pie, perfect for four to six people. Serve with lovely, buttery peas for a perfect meal!
You will need:
4 chicken breasts, cut into 2 cm chunks
80 g unsalted butter
80 g flour
200 ml milk
100 ml double cream
200 ml of low-salt chicken stock 1 teaspoon salt (optional)
1 egg, beaten
shortcrust pastry (see page 44 for recipe) or 320 g of shop-bought shortcrust pastry

Ask a grown-up to preheat the oven to 180o, 160o fan or gas mark 4.
Divide your pastry into two even balls. Then, using plenty of flour on your rolling pin and board, roll each ball of pastry out to about 1⁄2 cm thick and slightly larger than your pie dish.
Line your pie dish with half of the pastry and prick with a fork in several places. Cut off any overhanging pastry with a table knife and then set it aside with the rest of your pastry to make the lid. Put the chicken into your pastry-lined dish. Then wash your hands and ask your grown-up to melt butter in a saucepan over a low heat.

1 hour (or 1 hour 20 minutes if making pastry – see page 44 for a recipe).
