Weight Watchers Carrot Cake

Ingredients:
2 cups all-purpose flour
2 Tbsp baking soda
2 Tbsp ground cinnamon
½ cup Splenda Brown Sugar Blend
1 egg
2 egg whites
⅔ cup buttermilk
1 (8 oz) Dole Canned Crushed Pineapple in Juice
2 cups shredded carrots
1 Tbsp olive oil
2½ tsp vanilla extract
3 oz sweetened coconut flakes
1 cup raisins
1 (8 oz) pkg light cream cheese
4 tsp butter, light
1½ cups powdered sugar
1 tsp orange zest
Combine flour, soda, and cinnamon. Set aside.
Combine brown sugar, eggs, milk, pineapple and its
juice, carrots, oil, and vanilla. (ONLY 2 tsp, THE
OTHER ½ tsp IS FOR THE ICING). Beat at medium
speed until well blended. Mix in dry mix. Pour into a
greased 9x13. Bake at 350°F for 25-35 minutes. Let
cool before frosting. Cut into 20 pieces.
