Walnut Beet Dip
Ingredients Instructions
½ lb Ambrosia Sliced Pickled Beets, 1. Put the beets, walnuts, lemon juice, chile

roughly chopped flakes, garlic and salt into a food processor
or blender. Purée on high until combined.
1 cup Walnuts, toasted Scrape down the sides, and blend again, until
the mixture gets slightly smoother. Add the
olive oil, and blend again, scraping down the
3 tbsp Ambrosia Lemon Juice sides, until mixture forms a coarse purée.

Taste, and adjust seasoning with salt, pepper
1 tsp Chili Flakes and additional lemon juice, if desired.
1 Garlic Clove, peeled 2. Spoon the beet dip into a desired plate or
bowl. Top with a generous drizzle of olive oil
and chopped walnuts; grate some lemon zest
1 tsp Ambrosia Kosher Salt on top. Serve with pita and cucumbers for
