Best-Ever Baba Ghanoush
Ingredients Instructions
1 Garlic Head 1. Move oven rack to top third of oven and
preheat to broil on high. Line a large baking
1 ⅓ tbsp Ambrosia Extra-Virgin Olive Oil sheet with foil.

2. Cut the top off the head of garlic and drizzle
Ambrosia Kosher Salt with a teaspoon of olive oil. Season with salt

and pepper and wrap in foil.
Freshly Ground Black Pepper
3. Place garlic on a large baking sheet and place
3 cups Ambrosia Eggplant Puree in oven. Broil, turning occasionally, until

garlic is soft, 30 to 35 minutes.
3 tbsp Ambrosia Lemon Juice 4. In a large bowl, combine eggplant, roasted
®
garlic cloves, and lemon juice. Use a fork to
¼ cup Ambrosia Tahini Paste mash garlic cloves, then continue stirring
®
until lemon juice is incorporated. Add tahini
and 1 tablespoon of olive oil. Stir to combine
1 tbsp Freshly Chopped Parsley
and season with salt, then transfer to serving
dish.
Pinch of Crushed Red Pepper Flakes
5. Garnish with parsley, pepper flakes, and a
Toasted Pita, for serving drizzle of olive oil. Serve with toasted pita
and/or vegetables.
