Pickled Beet Salad with



        Goat Cheese and Walnuts








        Ingredients                                             Instructions



        4 cups Ambrosia  Diced Pickled Beets                    1.  Whisk together the olive oil and vinegar in a

                                                                    large bowl, season with salt and pepper.
        3 tbsp Ambrosia  Extra Virgin Olive Oil
                          ®
                                                                2.  Drop the diced beets into the dressing. Mix
                                                                    thoroughly to ensure the beets are completely
        1 tbsp Ambrosia  Sherry Vinegar                             coated in the dressing.

        Ambrosia  Mediterranean Sea Salt, Fine                  3.  Arrange the arugula on a serving platter,

                                                                    then spoon the beets into the center of the
        6 cups Arugula Leaves                                       leaves. Crumble the goat cheese over the top
                                                                    of the beets. Scatter the walnuts over the goat
                                                                    cheese and serve!
        2/3 cup Goat Cheese


        ⅓ cup Roasted Walnuts, chopped
