Sun Dried Tomato Quinoa
Salad with Balsamic
Vinaigrette
Ingredients Instructions
5 oz. Baby Spring Lettuce Blend 1. For the dressing, combine all of the dressing
ingredients in a jar, cover with lid and shake
¼ cup Basil Ribbons to blend.
1 ¼ cups Ambrosia White Quinoa, cooked

2. In a salad bowl layer together spring lettuce
⅓ cup Shaved Parmesan, slightly crumbled blend, basil, quinoa, parmesan, almonds and
sun dried tomatoes.
½ cup Almonds, chopped and toasted
¼ cup Ambrosia Diced Sun Dried Tomatoes 3. Shake dressing again and pour over salad.

4. Toss to coat and serve immediately.
BALSAMIC VINAIGRETTE
¼ cup Ambrosia Extra Virgin Olive Oil
®
2 tbsp Ambrosia Balsamic Vinegar
®
1 tsp Minced Garlic
1 tsp Honey
1 tsp Esprit de Paris Smooth Dijon Mustard
®
Ambrosia Mediterranean Sea Salt, Fine
®
Freshly Ground Black Pepper, to taste
