Vegetable Quinoa
with Halloumi& Mint Yoghurt

Ingredients:
• 500mlstock
• 200g quinoa
• 2 x carrots
• 50g radish
• 100g cauliflower
• 200g sweetpotato

• 200g haloumi(sliced)
• Salt& pepper
• 100m lsoya yoghurt
• fresh m int leaves
• 1crushed garlic clove
1.Pourthe stock into a saucepan.Add quinoa and cook for 15m ins.
2.Place carrots,radish,cauliflower,sweet potato in a food processor and pulse until finely chopped
3.Add vegetables and paprika to a pan,and fry.Season with salt& pepper
