Bean and Cheese
Taquitos

Ingredients
Dipping Sauce
6 Mission Extra Thin
Corn Tortillas 1/4 C (56g) Fat
3/4 C (188g) Fat Free Greek
Free Refried Beans Yogurt
1/2 C (56g) Fat Free 1 mini cup (57g)
Shredded Cheddar, 100-Calorie
or reduced fat Pack Guacamole
2 Tbsp (30g) Taco
Sauce
1 In a small bowl, mix the tofu and
taco sauce together. Put on
hold.
2 Wrap the tortillas with paper
towels or paper trays for 60
seconds.
3 Place the tortillas on a flat
surface and add 2 tablespoons
of mashed beans to the side of
the tortillas. Put a little chopped
cheese on top.
4 From the side containing
beans and cheese, roll the
tortillas tightly. Place the rolled
tortillas in the basket of the
fryer. Repeat this process for
all 6 tortillas.
5 Fry at 400ºF for 8-10
minutes, or until the tacos turn
golden. If you are using an oven,
please bake rolls on the grill at
the same time / temperature at
the same time (time may vary,
so please pay attention to them).
Dipping Sauce
Mix the Greek yogurt and
guacamole together in a small
bowl. Serve with warm taquitos.
