fermentation processing pre-digests the fruit high-weight
macromolecular components to their easily absorbable and
less caloric break-down products, whilst preserving and
concentrating NONI’s and other fruits’ qualified precious
secondary-metabolite bioactive fractions, which are not
substrates of microbial hydrolytic activity.
A large number of these NONI ripe-fruit components, mainly
phenolic compounds, organic acids and alkaloids of
biomedical relevance have been identified, classified, and
described in terms of chemical structure-biological activity, by
a solid scientific and medical literature in the last two decades.
To quote only the most relevant molecules so far identified in
terms of unique health properties, a specific polysaccharide-
rich fraction, containing mainly the simple sugars glucuronic
acid, galactose, arabinose, and rhamnose, has been identified.
A list of unique trisaccharide fatty acid esters (named
noniosides), along with the phenolics damnachanthal (an
anthraquinone, in traces in the fruit) Americanin A (a
neolignan), narcissoside (a flavonol glycoside), scopoletin and
isoscopoletin (coumarins), aesculetin, asperulosidic acid
(iridoid) and the well described biologically active flavonoids
rutin and quercetin, and many active phytosterols and
terpenoids, were found to be potent antioxidants, free
radical neutralizers, detoxifiers, lipid- and energy
