RON WRIGHT’S LEMON BARS

        Ingredients
        CRUST:

        1 cup flour                                     1/3 cup melted butter
        1/4 cup confectioners sugar


        TOPPING:

        1 cup sugar                                    2 tablespoons flour
        2 eggs                                         2 tablespoons lemon juice
        1/2 teaspoon lemon extract                     1/2 teaspoon baking powder
        1/4 teaspoon salt



        DECORATION:
        Confectioners sugar



        Instructions
        Combine the crust ingredients and pat into a 8 inch square baking pan. Bake at 375
        degrees for 15 minutes. For topping, combine the sugar, eggs, flour, lemon juice,
        extract, baking powder and salt into a mixing bowl. Mix until frothy, pour over crust.

        Bake at 375 degrees for 18-22 minutes or until light golden brown. Dust with
        confectioners sugar. Makes about 9 servings.
