HELEN A. HUBLER’S OLD FRUIT CAKE
Ingredients
1 pound brown sugar 1/2 cup butter
2 eggs 1 cup buttermilk
1/2 pound citron 1 pound currants
1 pound raisins 1 cup English walnuts, chopped
3 cups flour 1 teaspoon baking soda
1 teaspoon cinnamon 1 teaspoon cloves
1 teaspoon nutmeg
Instructions
Mix all the ingredients together and bake at 350 degrees until done.
VIRGINIA MAZZOLA’S ZEPPOLES
Ingredients
4 cups flour 6 eggs
1/4 cup melted butter pinch of salt
6 teaspoons baking powder 1 cup of sugar
oil confectioners sugar
Instructions
Beat eggs, put in baking powder, salt, sugar, and butter. Make a well in the flour and
mix in egg mixture, Knead it well. Cut out little squares and roll into balls. Fry in hot
oil. Drain on paper towel. Roll in confectioners sugar.
HELEN AUNGST HUBLER’S CUP CAKES
Ingredients
1 ½ cups sugar 1/2 cup butter
3 eggs, well beaten 1 cup milk
1 teaspoon vanilla 2 cups flour
1 teaspoon baking powder
Instructions
Cream sugar and butter together. Add the rest of the ingredients and pour batter into
cupcake cups. Bake at 350 degrees.
BARBARA JONES CHEESE TARTS
Ingredients
2 8 ounce packages of cream cheese 3/4 cup sugar
1 teaspoon vanilla 2 eggs
box of vanilla wafer cookies any canned fruit pie filling
Instructions
Beat cream cheese, sugar, vanilla and eggs. Put cupcake liners in cupcake tin. Place a
vanilla wafer cookie at the bottom of each cupcake liner. Fill 3/4 full with cream cheese
mixture. Bake at 350 degrees for 20 minutes. Add pie filling to the top of each tart.
Refrigerate and serve cool with a dab of whip cream on top. Makes 18 cheese tarts.
