MARGARET HUBLER’S PIE CRUST
Ingredients
3/4 cup Crisco 1/4 cup hot water
2 cups flour 1/4 teaspoon salt
2 tablespoons milk

Mix Crisco and hot water until creamy. Add flour, salt and milk. Mix
Margaret Hubler is the wife of my father, John A. Hubler’s brother, Clarence. They had
no children and lived in Pennsylvania. Aunt Margaret was a seamstress in the clothing
mill for many years. She and my uncle Clarence were very proud of anything made in
the USA. Aunt Margaret was a great cook and baker. I have three of her recipes.
MARGARET HUBLER’S SHOO-FLY PIE
Ingredients
1/4 cup butter 1 ½ cups flour
1 cup brown sugar 1 cup molasses
1 egg 3/4 cup hot water
3/4 teaspoon baking soda
Instructions
Work butter, flour and brown sugar together to make crumbs. Beat egg in bowl; add
molasses, hot water and baking soda. Pour liquid in pie shell and add crumbs. Bake
15 minutes at 400 degrees then about 30 minutes at 350 degrees in a 9 ½ inch pie
plate.
MARGARET HUBLER’S PUMPKIN PIE
Ingredients
1 cup pumpkin 5 egg yolks
3/4 cup sugar 1 tablespoon flour
1 small piece butter (melt and brown) pinch cinnamon
pinch salt 2 ½- 3 cups milk
Instructions
Mix above ingredients then beat egg whites slightly and add to mix. It makes 2 pies
Dot top of pies with butter and sprinkle with cinnamon..
Bakes at 425 for 20 minutes, 320 for 20 minutes, then 300 for 10 minutes.
