CHICKEN CORDON BLEU
Ingredients
4 large thin chicke cutlets
2 slices deli ham
2 slices Swiss cheese
1/4 cup melted butter
1/2 cup bread crumbs
1/2 teaspoon salt
Instructions
Place ham and cheese over chicken and roll up. Use toothpicks to secure. Combine
bread crumbs and salt. Roll chicken in butter and then roll in breadcrumb mixture.
Put in a greased baking dish and bake at 350 degrees for 40-45 minutes. Take out
toothpicks and serve. I sometimes use Italian bread crumbs and add paprika.
IRENE MAZZOLA’S SAUSAGE & PEPPERS
Ingredients
sweet Itailian sausages green or red sweet peppers
small onion fresh garlic mashed
olive oil
Instructions
Brown sausages in a little olive oil for 10 minutes. Remove from pan and dry sausages
on paper towel. Slice onion’s and peppers. Put a little olive oil in skillet lightly fry
peppers, onion and garlic. Add the sausages and fry for about 10 minutes.
STUFFED GREEN PEPPERS
Ingredients
3 large green peppers 1/2 cup seasoned bread crumbs
1 cup boiling water 1 ½ teaspoon salt for water
1 teaspoon salt 1/2 pound ground beef
1 teaspoon pepper 8 ounces tomato sauce
1 tablespoon chopped onion
Instructions
Heat oven to 350 degrees. Prepare peppers by cutting the top o , clean out the inside
and rinse in and out. Cook peppers in the boiling salt water for about 5 minutes,
drain. Mix rest of the ingredients. Stu peppers lightly with mixture. Stand peppers
upright in a small baking dish.
Bake covered for 45 minutes. Uncover and bake for 15 minutes.
