HELEN WRIGHT’S NEW HAMPSHIRE MEAL
There are 2 ways to make this meal. One from scratch and one using boxed ingredients.
Ingredients
1 pound box of elbow or small shell macaroni
1 ½ pound ground beef
18 ounces homemade tomato sauce
1 12 ounce package shredded cheddar cheese
salt and pepper to taste
1 package frozen chopped spinach cooked
Instructions for scratch recipe
Follow directions on the box to cook macaroni and drain. Brown ground beef and
make a few meatballs if you wish, drain and put aside. Cook spinach as directed and
drain. Lightly grease an 8x12 inch pan. Combine all ingredients and put in baking pan
and cook at 350 degrees till warm through.
Instructions for boxed recipe
Frozen meatballs 2 boxes macaroni and cheese meal
salt and pepper to taste 1 package frozen chopped spinach
18 ounce jar tomato sauce
Cook macaroni and cheese meal as directed. Mix all ingredients and follow directions
from above.
Every summer, Ron, Helen Kim Christy, Todd, Drew and sometimes my Mom (Herta)
would go to Stoddard, N.H. and stay at the Kerber’s cabin #4 on Island Pond for one
week. The first meal was this meal prepared at home and frozen. Hopefully, it defrosted
a little by the time we got to the cabin. We arrived at the cabin after stopping at a
grocery store and bought all the groceries we needed for the week. After we arrived, the
children made their beds when they were old enough, helped unload the car and then
changed and ran to the lake. I would put the New Hampshire meal in the oven at 325
degrees for an hour and a half to make sure it was done. Dinner was the New
Hampshire meal and a loaf of Italian buttered bread.
Everybody looked forward to this trip every year.
