HELEN A. HUBLER’S OVEN FRIED CHICKEN

        Ingredients
        1/2 pound butter                 1 whole cut up chicken
        flour                             salt
        paprika                          pepper
        parsley


        Instructions
        Preheat oven to 425 degrees. Put  pan in oven with butter until butter us melted. Put
        flour, salt, pepper, parsley, and paprika in a small brown paper bag and shake. Rinse
        chicken pieces and drop in bag and shake. Put chicken pieces skin side down in
        baking pan. Bake 45 minutes and then turn chicken over for another 15-20 minutes.


        My Nana taught me how to make this in 1963. My mother went to Germany with my
        other grandmother and left me in charge of the house and the cooking. I was 15 years
        old. Nana, who couldn’t walk well sat on a stool in the kitchen and told me what to do
        in the making if this chicken dish. She could not help because her hands always shook.
        This delicious chicken dish was the first dinner I served Ron at my home before he and
        I were married. He loved it!



        CHICKEN WINGS

        Ingredients
        chicken wings                           paprika                     salt
        pepper                                  basil                       oregano
        parsley                                 butter                      smashed garlic


        Instructions
        Separate chicken wings and discard tip. Coat chicken with spices and place in a
        baking pan. Put thin slices of butter over the top of the wings and sprinkle smashed
        garlic. Bake at 350-375 degrees for 30 minutes. If not brown, broil for a few minutes
        and sprinkle fresh lemon over the wings.
