RON’S ITALIAN MEATBALLS

        Ingredients
        3-4 pounds ground beef
        2 slices white bread soaked in water or milk
        2 tablespoons prepared garlic or 3 to 4 fresh garlic cloves finely minced

        1 tablespoon oregano
        1 tablespoon basil or 6-8 leaves fresh basil chopped
        1 tablespoon parsley or 3-4 sprigs parsley chopped
        2 tablespoons finely chopped white onion
        2 eggs

        2 handfuls of Parmesan cheese
        1 teaspoon pepper
        olive oil



        Optional: 1/3 cup approximately of tomato sauce


        Instructions
        Mix all ingredients together by hand. Make small meatball in palm of your hand. Fill

        frying pan only 1/2 full of olive oil. Heat olive oil in frying pan and once the oil is hot,
        place meatballs in to fry. Meatballs are done when they are firm when pressed with a
        fork. Sometimes, Ron would add some tomato sauce and mix it into the meatball mix.



        Ron had watched his grandmother, Virginia Mazzola make her meatballs. Ron fine
        tuned her recipe and mine to make this recipe, which he has made many times
        especially in his retirement. Early in our marriage, I was the one to make the
        meatballs, but then Ron took over.
