INSTRUCTIONS
1. Take out a large bowl, place dry soy meat in it
and pour over hot veggie stock until it’s all
covered. Set aside for 5-10 minutes, until soy
meat is soft.
2. Afterwards pour off water and press out any
more water in your soy meat so it won’t taste
watery in the end.
3. Add olive oil and gyros spice and stir well. Leave
to marinate for at least 15 minutes and then fry,
roast or grill the soy strips.
4. In the meantime, wash iceberg lettuce and cut
into stripes. Cut olives into rings. Wash and dice
cucumber and tomatoes. Peel onion and cut into
rings.
5. Prepare Tzatziki like instructed on our Blog.
6. Heat pita bags in a pan without oil until warm and
stuff with all the ingredients.
Tzatziki is made simply with yogurt, drained
cucumber, olive oil, fresh herbs (usually mint or
dill), garlic, lemon juice and salt. It’s a refreshing
chilled sauce, dip or spread.
NOTES
Another option for the potatoes is using aquafaba if
you don't use oil. Aquafaba is simply the juice from a
can of chickpeas. Use the same amount as the
broth.
Adjust the amount of salt based on your taste. You
may need more or less depending on what broth
and Tamari/soy sauce you use.
You can substitute garlic powder for fresh garlic if
you don't have it, but the fresh garlic yields a more
authentic flavor.
