Revani (reh -vah-NEE) (also spelled
                  Ravani) is not difficult to make and is a
                  delightful addition to any sweet table. It is
                  a semolina sponge cake with a touch of
                  lemon and sweetened with a simple syrup

                  flavored with orange zest.

30 MINUTES  BAKE  4 PORTIONS  240 CALORIES

           INGREDIENTS

• 1 cup flour
• 1 cup fine semolina
• 1 tbsp. baking powder
• 1/2 cup (1 stick) unsalted butter
• 1 cup sugar
• 3 eggs separated
• 1 tsp. vanilla extract
• Zest of 1 lemon
• 1 cup milk
• Pinch of salt
• 1 1/2 cups water
• 1 1/2 cups sugar
• Two 3-inch strips of orange zest
• 1 tsp. freshly squeezed lemon juice
• Powdered sugar, ground cinnamon, or 1/2 cup almonds, blanched,

   lightly toasted, and chopped (optional)
